BBQ Chipotle Chicken Taco
Ingredients: (Serves 2)
BBQ Chipotle Chicken
- 400g Chicken Breast, Sliced
- 2tbs chipotle in adobo sauce
- 1tsp smoked paprika
- 1tsp cumin powder
- 1tbs olive oil
- 1 pinch sea salt
Lime Crema
- ½ cup sour cream
- ½ cup mayo
- 1 lime juice
- Pinch of salt
Pineapple salsa
- ¼ pineapple diced
- 1 small red onion, diced
- 1 small cucumber, diced
- Pinch of salt
- Splash of olive oil
- ½ lime juice
- 8-12 Tortillas, warmed on the BBQ
- Coriander leaves to garnish
- 1 jalapeno, sliced
Method:
1. Marinate the chicken in the chipotle, smoked paprika, cumin, olive oil and salt for a couple of hours.
2. Mix all the salsa ingredients together in a bowl.
3. Add the chicken to a smoking hot BBQ, cook until slightly blackened and cooked through.
4. To serve add the chicken to the tortillas, top with salsa, a drizzle of crema and a coriander leaf.
